Chocolate Recipe

Rainforest, ocean, eco-lodge, chocolate plantation…This vacation was an incredible experience!  So much about staying at La Loma Jungle Lodge in Panama was amazing, but learning about the production of chocolate was the best part.  Or, maybe eating and drinking the chocolate was the best part!

When I returned home I created this super clean, delicious, melt-in-your-mouth chocolate recipe that is beneficial to your health.  Yes, healthy chocolate that you can eat every day (I do!)- full of antioxidants, minerals, and good fat.  This is the dark stuff, so be prepared for a punch!

Healthy Dark Chocolate Recipe

In a small pot, melt over LOW heat:

1/4 cup + 2 T  Coconut Oil

Add:

1/4 cup coconut sugar (grind in a coffee grinder for 8 seconds)

1/8 teaspoon salt

Whisk until smooth and remove from heat.

Add and whisk:

10 drops stevia

1 teaspoon vanilla extract

Add a little at a time and whisk until smooth:

1 cup Raw Cacao Powder

Press parchment paper into an 8×8 baking dish. Pour the chocolate in and smooth out with a rubber scraper.  Place the dish in the freezer (make sure it is level) for approximately 10 minutes, or until it is solid.  Remove from freezer and break into pieces.  Wrap up in parchment and store in an airtight container in the refrigerator. Indulge and enjoy your homemade chocolate!
